6 cloves garlic, chopped finely
1/3 cup extra virgin olive oil
1 pint cherry tomatoes, halved
¼ cup sun-dried tomatoes in olive oil roughly chopped
1-28oz can diced tomatoes*
1 tsp. crushed red pepper flakes
½ cup fresh basil, roughly chopped
Salt, pepper, parmesan and romano cheese to taste
Heat olive oil and sauté garlic and crushed red pepper for about 3-4 minutes.
Add sun-dried tomatoes and sauté 3-4 more minutes.
Now add diced tomatoes, add salt and pepper and simmer for about 10-15 minutes.
Add cherry tomatoes and simmer uncovered for another 10-15 minutes.
Finally add your basil and simmer for another 5 minutes.
Pour sauce over pasta of your choice and then add a really good grated cheese. Make a nice side salad, some good crunchy bread, and you’re set! Enjoy!
*1 (28-ounce) can = 3 cups undrained or 2 to 2 ½ cups drained tomatoes.
