Warm your bones with this easy, hearty, inexpensive soup
1 bunch fresh spinach
6 large white mushrooms
2 medium ripe tomatoes
4 oz. dried “star” macaroni
4 cups vegetable or chicken broth
2 tbsp. olive oil
sea salt, fresh ground pepper to taste
Thoroughly wash vegetables. Remove stems from spinach, discard.
Slice vegetables into thin pieces approx. 1” long.
Add all ingredients into a small stock pot.
Bring to boil, reduce heat, and slowly simmer for 15 minutes.
Adjust seasonings, add small amount of water if too salty or thick.
Serve in wide, shallow bowls accompanied by a crusty bread.
Garnish with parmesan cheese if desired.
